Kush is a new restaurant in Clifton, Bristol, from chef Aktar Islam, whose solo venture Opheem opened in Birmingham in 2018 and holds two Michelin stars. The years since have been spent thinking about what a sub-continental kitchen could look like if it stopped repeating itself.

The starting point is simple. India is not a cuisine. It is a continent of cuisines, each one shaped by a different climate, a different invasion, a different harvest. Kush moves between them without apology. Some of what we serve was eaten by emperors. Some of it is eaten standing up, on a street, from a paper plate. Both belong on the same menu, and on the menu they sit as equals.

The room is built around that idea. Pattern, paint, low light, and a bar that runs late. A space designed to hold the table of four who have come for dinner and the table of two who have come for one dish and a drink.

The music is Indian hip-hop, chosen with the same care as the food. The parallels between the two have always been there for anyone listening: both inherit from what came before and answer back to it. The playlists are part of the menu.

The hospitality is the part we think about hardest. Kush is built for people who want to eat well without ceremony, and the room is set up to make that easy: somewhere to sit, something good to drink, a kitchen that knows what it is doing, and time to enjoy it. The rest is the work of the people in the room on the night. We hire for warmth and train for the rest.
